Sorry all, I should have done this sooner. Here is a completed sliced piece of pave. Notice the inlocked layers of vegetable goodness. I did find that the beets bled a little too much for color for my liking, but the flavor they impart is hard to argue with. I am going to try and soak the beet slices first next time.
The plated slice is paired with a breaded pan-fried pork chop with a brie and mushroom sauce. There is a nice little pea shoot salad as well, dressed in white balsamic. The dish needs this acid to cut the richness of the pork and the sauce.
